2-2/3 cups unsifted all purpose flour
l tsp. baking soda
l tsp. baking powder
l/2 tsp. salt
2 tbsps. sugar
l/2 cup butter
l tbsps. grated orange rind or dried orange peel
l/2 cup currants
3 tbsps. vinegar
3/4 cup orange juice
l egg, beaten
milk
sugar
Mix flour with baking soda, baking powder, salt & sugar. Cut in
butter until mixture resembles coarse corn meal. Stir in orange
rind & currants. Combine vinegar & orange juice. Make a well in the
center of flour mixture; add liquid & egg all at once. Stir mixture
with a fork until all dry ingredients are moistened. Turn onto a
floured board; knead gently 8 to l0 times, adding a little more
flour if necessary. Roll into a l2x6″ rectangle. Cut into 8 3″
squares; cut each square in half diagonally to make 2 triangles.
Brush tops with milk; sprinkle with sugar. Place on greased baking
sheet. Bake at 425 oven for about l5 mins. or until golden brown.
Yields l6 scones.
