l/2 lb. skinless, boneless chicken breasts
2 tsps. olive oil
l/3 cup minced shallots (or onion)
l clove garlic, minced
l/2 cup orange juice
Grated rind of one orange (or l tsp. dried orange peel)
2 tsps. honey mustard
ground black pepper
Wash & dry chicken breasts and cut inhalf. Saute in l tsp. hot oil
in non stick pan until brown on both sides. Set aside. Add
remaining tsp. oil and saute shallots & garlic in oil until
shallots begin to brown. Stir in orange juice, rind, honey mustard
and pepper to taste. Reduce heat & return chicken to pan. Cover and
simmer about 5 to 7 mins. until chicken is cook through. Serve
topped with sauce.
Yield: 2 serving.
