2 racks baby back pork ribs (2 to 3 lbs. total) cut into individual ribs
l/4 cup fresh orange juice
l/4 cup soy sauce
l/4 cup dark brown sugar
l tsp. ground cumin
put ribs in large sealable plastic bag. sstir together orange juice, soy sauce, brown sugar and cumin in a bowl until sugar is dissolved then pour marinade ove ribs in bag and seal bag, pressing out excess air. marinate ribs, chilled, turning bag over after 30 mins, l hour total. put oven rack in middle position and heat to 375. transfer ribs and marinade to 9xl3 glass baking dish and arrange ribs in l layer, not touching. roast ribs 30 mins then turn over ribs with tongs and continue roasting until they are tender and well browned and marinade is thick and syrupy, about 30 mins. more. serves 4 to 6 as d’oeuvres
