NUTTED WILD RICE SALAD WITH RAISINS

2 boxes Uncle Ben’s Wild and Brown Rice
2 cups shelled pecan halves
l cup yellow raisins
grated rind of l large orange
8 scallions thinly sliced including green parts
l/2 cup olive oil
2/3 cup fresh orange juice
3 tsp. salt
pepper to taste
Cook rice according to box diections but do not add seasoning packet that comes in box (save for another use).When rice is done add remaining ingredients and toss gently. Adjust seasonings to taste. Let mixture stand for 2 hrs. or so to allow flavors to develop. Serve at room temp.
