3 cups tomatoes (pour off liquid) fresh Romas are good
2 tbsps. capers
l/4 cup minced olives (black)
3 tablespoons balsamic vinegar
l/2 cup feta cheese
3 cloves minced garlic
2 tbsps. chopped fresh basil
l/3 cup olive oil
Mi x all ingredients. add feta right before serving. Serve with crusty bread – it doesn’t need to be toasted – the other way the sauce can be absorbed into the bread.
