2 lbs. jumbo shrimp with tails (26 to 3)0
peeled deveined and cooked
l/2 cup white wine vinegar
l/4 cup lemon juice
l/4 cup olive oil
2 cups thinly sliced spanish onion
2 cloves garlic minced
l tsp. ground cayenne pepper
l/2 cup fresh minced dill
In a large glass o bowl combine all of the ingredients except lemon wedges. Toss to coat the shrimp well. Cover with plastic wrap and marinate in the frig 4 or more hrs. (up to 2 day). Garnish with lemon wedges before serving. Makes about 20 appetizer servings.
