2 lbs. mussels cleaned and beards removed
3 garlic cloves coarsely chopped
l cup fresh flat leaf parsley
l/2 stick butter cut into pieces
l/4 tsp. salt
l/4 sp. pepper
Heat oven 450. Spread mussels in a 9xl3″ dish. Blend all remaining ingredients to a paste in food processor. Spoon mixture over mussels. Cover tightly with foil and bake in middle of oven until all mussels are open, l2 to l5 mins. Discard any unopened mussels. Serves 2 as main course Gourmet March 2000
