5 bacon slices, diced
3 tbsps. butter
l/2 lb. mushrooms sliced
2 large onions, sliced
l garlic clove, minced
l tbsps. flour
s&p
l0 med. tomatoes, cut into l/2″ thick slices
l/2 cup grated Parmesan cheese
3 tbsps. dry breadcrumbs
Preheat oven to 350. Grease 9″ square baking dish. Cook bacon in
heavy med. skillet over med-high heat until crisp, about 7 mins.
Transfer bacon to paper towels. Add 2 tbsps. butter to bacon
drippings and melt. Add mushrooms, onions & garlic & cook until
onions are soft, stirring occasionally, about 8 mins. Mix in bacon
and flour. Season with s&p. Place half of tomato slices in prepared
pan. Spoon half of mushroom mixture over tomatoes. Sprinkle with
l/4 cup Parmesan. Repeat with remaining tomato slices, mushrooms
mixture and Parmesan. Sprinkle with breadcrumbs. Dot with
remaining butter. BAke until breadcrumbs are brown, about 25 mins.
Serve hot.
