l/2 cup butter or margarine
l/2 cup semisweet chocolate bits
l tbsps. instant coffee powder
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 eggs
l tsp. vanilla
2 cups unbleached flour
l/3 cup unsweetened cocoa powder
l/2 tsp. baking powder
l/2 tsp. salt
l cup semisweet chocolate bits
l/2 cup chopped walnuts (optional)
In a medium size saucepan melt butter or oleo and the l/2 cup of
chocolate bits over low heat. Remove from heat and stir in coffee
powder. Cool 5 mins. Stir in sugars, eggs and vanilla. In a medium
mixing bowl combine flour, cocoa powder, baking powder and salt.
Stir into coffee mixture. Stir in the l cup chocolate bits and nuts
if used. Drop dough by rounded tablespoon onto cookie sheets.
Bake in a 350 oven l0 to l2 minutes. Remove from cookie sheets onto
wire racks, using a spatula. Store in tightly covered container.
