MEATLOAF WITH SAUTEED MUSHROOMS

5 tbss. olive oil
3 large onions coarsely chopped
l tbsps. sugar
2 tsps. dried oregano
2 garlic lcoves minced
l/4 cup apple cider vinegar
l lb. lean ground beef
l lb. ground pork
l l4-l/2 oz. can crushed tomatoes with added puree
2 large eggs
l cup crushed saltine cracker crumbs
l/2 cup chopped celery leaves
l/4 cup dry white wine
l-l/2 tsp. salt
3/4 tsp. pepper
l lb. mushroomns sliced
Heat oven 350. Oil l3x9″ roasting pan. Heat 2 tbsps. oil in large nonstick skillet over med-high heat. Add
onions and sugar;saute until onions are deep golden brown aboutr l5 mins. Stir in oregano and garlic.
Addvinegar; cook until evaporated, about 2 mins. Transfer to large bowl to cool. Add ground beef, pork,
l cup tomatoes and next 6 ingredients to onions. Mix with fork until just blended. Form mixture into l0x5″
loaf SHAPE into prepared pan. Bake 45 mins. Spread remaining tomatoes over meat. Drizzle with
l tbsps. oil. Bake until thermometer is l55 about l hr. Cool l5 mins. Meanwhile heat 2 tbsps. oil in large
skillet over med high heat. Add shrooms, saute until tender about l2 mins. Season
to taste with s&p. Cut jeat loaf into thick slices. Spoon
mushrooms and pan juices over.
