Filling: l can (20 oz.)crushed pineapple (juice pack or light syrup)
drained and divided
4 egg yolks, lightly beaten
l tbsps. water
l/2 cup firmly packed cornstarch
l cup granulated sugar
l/4 tsp. salt
2 cups milk
2 tbsps. butter
l tsp. vanilla
Crust: l-l/2 cups flour
2 tbsps. granulated sugar
l/2 tsp. salt
l/2 cup butter flavor shortening
2 tbsps. toasted finely chopped unsalted macadamia nuts (finely
chopped pecans or walnuts may be substituted; to toast, place
about l/2 cup chopped nuts in baking pan in 350 oven,stir every
2 mins. until browned. Cool before using.)
2 tsps. grated lemon peel or zest
3 to 4 tbsps. cold milk
Cream Cheese Filing: l 8 oz. pkg. cream cheese, softened
l/2 cup confectioners sugar
l/2 tsp. vanilla
l/3 cup toasted finely chopped unsalted macadamia nuts
Reserved l/3 cup drained crushed pineapple
Topping: l cup whipping cream whipped or 2 cups Cool Whip
l tsp. grated lemon peel or zest
l/4 tsp. confectioners sugar
Toasted finely chopped unsalted macadamia nuts
Garnish: l slice canned pineapple, drained, more crushed pinepple
For filling, measure l cup pineapple. Reserve reremaining l/3 cup. C
ombine egg yolks & water in bowl.Stir with fork to blend.Stir in
cornstarch.Combine sugar, salt, milk * l cup pineapple in saucepan.
Cook & stir on med. heat until mixture almost comes to a boil. Reduc
heat to low. Add egg yolks slowly, stirring. Cook & stir until thick
Add butter & vanilla. Remove from heat. Cover pan with waxed paper.
Rerigerate 30 mins. stirring once or twice. For crust combine flour
sugar & salt in med. bowl. Cut in shortening until pea size chunks.
Add nuts & lemon peel. Add mil,.Toss lightly with fork until it
forms a ball.. Press with hands to form 5-6″ pancake.Wrap in waxed
paper & chill l5 mins. Heat oven 350. Roll out dough l” larger than
9″ pie plate. Flute. Prick bottom & sides thoroughly with fork.Bake
at 350 for l5-20 mins. until golden brown. Cool. For filling,combine
cream cheese & confec. sugar in med. bowl. Beat with fork until
blended & smooth. Add vanilla. Add nuts & reserved l/3 cup drained
