Marmalade glazed spareribs
l cup soy sauce
l cup orange marmalade
l cup orange juice
l tbsps. minced garlic
l tsp. ground ginger
6 lbs. pork spareribs, cut into individual ribs
Whisk first 5 ingrewdients in large bowl. Add ribs; toss to coat. Transfer ribs and marinade to
plastic bag. Cover and refrigerate overnight turning ribs occasionally. Position l rack in center and l rack
in top third of oven in glass casserole dishes, l3x9 at 350. Line 2 large roasting pans with foil. Place racks
in pan. Transfer ribs from marinade to racks. Roast ribs until golden brown very tender and well
glazed rotating pans halfway thru roasting and basting frequently with marinade, about l-l/2 hrs.
Serve warm or at room temp. Bon Appetit September l998
