MARINATED AND BAKED SALMON

3 tbsps. soy sauce
2 tbsps. hoisin sauce
2 tbsps. olive oil
l tbsps. lemon juice
2 garlic cloves minced
2 tbsps. chopped scallion
l tbsps. finely grated peeled fresh ginger
l/4 tsp. pepper
4 (l/2 lb.) pieces center cut salmon fillet with skin (l” thick)
Put oven rack in middle and heat to 375. Line baking sheet with foil. Whisk together soy sauce, hoisin sauce, oil, lemon juice, garlic, scallion, ginger and pepper in shallow bowl. Add salmon, turning to coat and marinate covered at cool room tem0 30 mins. Remove salmon from marinade letting excess drip off and discard marinade. Bake salmon skin sides down on baking sheet until just cooked thru about 20 mins. Lift salmon from skin with metal sspatula dnd transfer to plate (diacard skin).
