MACARONI AND BLUE CHEESE

l lb. spiral tube shaped pasta
2 tbsps. butter
l/4 cup flour
2 cups whole milk
l cup whipping cream
3 cups grated cheddar cheese
l-l/2 cups crumbled blue cheese
l tbsps. minced fresh chives
Heat oven 350. Butter l3x9 glass dish. Cook pasta in large pot of boiling salted water until tender but still firm to bite stirring occasionally about 8 mins. Drain. Meanwhile melt butter in heavy large saucepan over med low heat. Add flour. Cook l min, stirring constantly (do not allow to brown). Gradually whisk in milk and cream. Simmer until mixcture thickens slightly whisking occaionally about 3 mins. Reduce heat to low. Add grated cheddar cheese and l cup crumbled boue cheese. Whisk until cheese melts aou 2 mins. Season sauce to taste with s&p. Add cooked pasta to sauce; stir to coat. Tranhsfer mixture to prepared baking dish. Sprinkle with remaining l/2 cup blue cheese. Bake until sauce bdgins to bubble about 25 mins. Sprinkle with chives and serve. Serves 8 Bon Appetit March 2003
