l/4 cup onion, chopped
3 tbsps. butter
3/4 cup bread, shreddd
l cup cooked lobster meat, very finely chopped
Pinch of thyme
salt & pepper to taste
6 flounder fillets
l can cream of shrimp soup
Sherry for soup
Saute onion in butter. Add bread, lobster meat, thyme, s&p, and
blend together. Preheat oven 375.
Spread mixture on each fillet. Roll up and place seam side down in
a pan. Heat soup and while stirring ad enough sherry to thin. Pour
over fillets and bake for 25 mins.
Serves 6 sparingly.
