l l6 oz. package frozen Baby Lima Beans
3 slices Canadiann bacon, coarsely chopped
l tbsps. butter
l tbssp. chopped onion
l tbsps. flour
l tsp. brown sugar
l/8 tsp. salt
l/8 tsp. ground tumeric
l/8 tsp. pepper
l large tomato, peeled and coarsely chopped
Cook lima beans according to package directions, drain, reserving
liquid. Add enough water to reserved liquid to equal l cup, set
beans & liquid aside. Fry Canadian bacon in large skillet about 3
minutes; remove from skillet and set aside. Melt butter in skillet;
add onion, stirring until well blended. Cook l min. stirring con-
stantly. Gradually add reserved liquid; cook over med. heat, stirrin
constantly until thickened and bubbly. Stir in beans , cook until c
thoroughly heated. Spoon half of bean mixture into a lightly greased
l-l/2 qt. casserole . Layer tomatoes and bacon over beans; top with
remaining beans. Cover and bake at 350 for 20 mins.
