ITALIAN PLUM TART

Plum Cake, Italian (D/P, TNT)
Source: Old family recipe
Serves: 10 to 12

1 cup butter or margarine
1 cup sugar
2 cups flour
2 teaspoons baking powder
4 eggs
1 teaspoon vanilla
2 pounds Italian plums

Blend all ingredients together. Spread batter in a well greased 13″x9″x2″ Pyrex pan, or pan of comparable size. Put halved pitted plums over top of batter and sprinkle with a mixture of sugar and cinnamon. You can use a mixture of fruits in season such as blueberries, peaches, grapes, apples. I also like to add a small amount of well drained crushed pineapple to the batter.

Bake at 400°F for 30 to 40 minutes. Serve with ice cream or whipped cream.

This is a great Plum Cake Recipe I have been making for close to 65 years. It is easy to prepare and delicious.
