l lb. uncooked large shrimp unpeeled
2 green onions coarsely chopped
l shallot chopped
2 tbsps. chopped fresh tarragon
l cup mayo
l cup sour cream
l/2 tsp. Worcestershire sauce
l/2 tsp. hot pepper sauce
Bring med saucepan of lightly salted water to boil. Add shrimp and cook just until bright p9ink about 3 mins. Drain; rinse cunder cold water. Peel and defein shrimp; transfer to processor. Add green onions, shallot and tarragon; using on/off turns process until shrimp are finely chopped. Transfer mix to med bowl. Mix in mayo and next 3 ingredients. Season to tasgte with s&p. Cover and chill at least 2 hrs. (can be made l day ahead) Serve with potato chips and good with crudites. Bon Appetit August 2002
