8 ozs. coarsely ground ham
l egg
l/2 cup (approx.) bread crumbs
l med. onion, diced
l/2 red or green pepper, diced
l tbsps. mustard (approx.) – honey mustard or any other special kind
l/2 cup (approx.) sour cream
In a litle butter, saute onion and pepper. Mix together all
ingredients and add onion & pepper. Add extra bread crumbs or sour
cream until right consistency is reached for filling crepes.
Fill 8 crepes with above mixture. Roll up like little pockets.
Place in casserole dish and fill about l/2 with canned evaporated
milk. Cover generously with shredded cheddar cheese. Bake at 350
for about l/2 hr. or until cheese melts and liquid is almost all
absorbed. If left to stand for a little while, the liquid will
absorb by itself and ready to serve. The above ingredients are
enough for generously filling 8 crepes.
