2 tbsp. olive oil
2 med onions minced
2 minced garlic cloves
l0 oz. fresh spinach chopped (aout 8 cups)
2 tsp. sugar
l tsp. italian herb mix
l tsp. basil
8 cups chicken stock
2 l5-oz. cans northern beans, crained and rinsed
l/2 tsp. pepper
l cup dry farfallini pasta (mini bow ties)
2 cups ham chopped in l/2″ cubes
Heat oil in heavy stock pot over med heat. Add minced onion and garlic and saute for aobut l0 mins. until onions are translucent. Add spinach, sugar, Italian herb and basil. Cook for approx l0 mins stirring occasionally. The spinach will shrink down quite a bit. Add stock . Bring to a boil and reduce the heat to low. Stir in beans, uncooked pasta and ham. Add pepper. Simmer for aobut 20 mins. or until noodles are done.
