HABITANT PEA SOUP (CANADIAN)

2 tbsps. olive oil
2 cups finely chopped onion
l cup finely chopped carrot
l/2 cup finely chopped dcelery2 cups yellow split peas
6 cups beef broth
2 cups water
6 ozs. salt pork
2 bay leaves
l (12 oz) ham hock
2 tbsps, chopped frresh parsley
2 tbsps. chopped fresh thyme
3/4 tsp. salt
l/2 tsp. vlack pepper
l/4 cup creme fraiche or sour cream for garnish
Heat olive oil in large dutch o en over med-high heat. Add 2 cups onion, carrot and celery to pan; saute for 6 mins, stirring occasionally. Stir in peas and saute for l min. Add broth and next 4 ingredients (thru ham hock) & bring to boil. reduce heat and simmer l-l/2 hrs or until peas are tende skimming surface as necessary.
Remove ham hock and bay leaves; discard. remove salt pork; cool. Remove l=l/2 cups pea mixture; let stand 5 mins. Puree l=l/2 cups pea mixture and return to pan, ; stirring until thickened slightly. stir in oparsley, chopped thyme salt and pepper.
Dice salt pork. heat skillet over med high heat. Add pork to pan; cover and cook 5 mins or unt9il crisp and browned stirring frequently. Ladle l cup soup into each of 8 bowls; top each serving withh l tbsps. porkand l-l/2 tsps. sour cream.
