wipe off any dirt with a damp peper towel. Cut or snapoff the stem at the base. With a spoon scrape out the dark gills on the underside of the cap and discard. Brush both sides of mushroom cap with plenty of olive oil and season with salt just before grilling. Heat gas grill to high. Put mushrooms stem side up directly on the grate. Gr9ll the mushrooms for as long as they need to get very well browned (a lot of liquid will pool up in the cap) 6 to 8 mins. When the cap is brown turn it over and press down to gently push out as mush liquid as possible. grill for another 4 to 6 mins. until they’re mush thinner and drier.
