l l0 oz. pkg frozen baby lima beans
l cup water
3 tbsps. olive oil
2 bsps. chopped fresh parsley
l tbsps. micned garlic
l/2 tsp. salt
Cook lima beans, water, 2 tbsps. oil, l tbsps. parsley, garlic and salt in 2 qt. heavy saucepan. lightly covered over mod heat stirring occaisonally until beans are tender, l7 to 20 mins. Season with s&p and gtransfer to a bowl. Serve sprinkled with remaining tablespoon parsley and drizzled with remaining tablespoon oil.
Serv e with bread to sop up juice. Serves 4 Gourmet Nov. 2003
