FRIED TATERS W/OREGANO& PARMESAN

heat oil in l2″ nonstick skillet over mod high heat until hot but not smoking then add potatoes, onion, oregano, s&p and reduce heat to moderate. Cook, covered, stirring and turning potatoes over occ. until almost tender, about l0 mins. Remove lid and cook stirring and turning taters over 3 or 4 times until browned and crusts, 8 to l0 mins. more. Add s&p to taste then transfer to a shallow bowl and sprinkle with cheese.
