2 lbs. tomatoes = about 6 medium
l sweet onion very thinly sliced
8 oz. bacon – about l0 slices
8 oz. pkg. feta cheese, crumbled
2 tbs,. greek seasoning (oregano, pepper, lemon, garlic, majoram)
2 tbsps,. water
l/2 cup olive oil
l/4 cup balsamic vinegar
2 tbsps. honey
l tbsp. dijon mustard
wash tomatoes, peel and thinlyu slice onion set aside. chop bacon into l inch hunks, fry until crispy and brown, drain on paper towels in a large bowl mix greek seasoning in water, let stand a few minutes. add olive oil, vinegar, noney and musard, whisk well. add onion
and crumbled feta cheese into bowl, sir well, beaking up the cheeese ino smaller bits. let the dressing stand while slicing he
tomatoes, longer if you can. arrange tomato slices nicely on salad plates. just before serving sprinkle bacon on top of tomatoes
then pour a small ladle of dressing on top of each serving. serves 4-6 Penzeys
