In France, Clafouti may be made with a variety of fruits. Serve
leftover Claifouti cold, with cream.
3 eggs
l cup milk
l/2 cup flour
l/4 cup granulated sugar
l tsp. vanilla
2 cups pitted dark sweet cherries
Powdered sugar
Heat oven to 350. Beat together eggs, milk, flour, granulated sugar
and vanilla with hand beater until smooth. Spread cherries in
greased 8x8x2″ baking dish. Pour batter over cherries. Bake, un-
covered, until puffed and golden brown, 45 to 60 mins. Sprinkle with
powdered sugar. Serve warm.
Serves 6.
