5 tbsps. solive oil
l large leek, sliced
5 large garlic cloves, sliced
l0 green onions, halved lengthwise, cut crosswise into 2″ pieces
l cup fish stock or bottled clam juice
4 orange roughy or sea bass fillets
Chopped fresh parsley
Heat 3 tbsps. oil in heavy large saucepan over med. heat. Add leek
and garlic and saute 3 mins. Stir in green onions and styock. Boil
until liquid is reduced to glaze, stirring occasionally, about
6 mins. Season with s&p. (Onion mixture can be parpared l day ahead.
Cover and refrigerate.)
Heat remaining 2 tbsps. oil in heavy large skillet over med-high
heat. Season fish with s&p. Add to skillet and cook until just
cooked through, about 4 mins. per side. Transfer to plates. Add
onion mixture to skillet and stir to heat through. Spoon onion
mixture over fish. Sprinkle with parsley and serve.
