We served Irish Soda Bread at our “Luck O’ The Irish Tea” in March. We have had many requests for this recipe and it is so easy to make.
Ingredients:
1 cup oil
2 cups sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups plain flour
1 teaspoon of salt
2 teaspoons baking powder
1 teaspoon cinnamon
4 cups diced apples
1 cup chopped pecans
12oz. butterscotch morsels
Directions:
Blend the first four ingredients together: add flour, salt, baking powder and cinnamon. Fold in diced apples and chopped nuts. Pour batter into greased and floured 9×13 inch baking pan. Sprinkle butterscotch morsels over mixture and bake at 350 degrees for 50-60 minutes.
