DUTCH APPLE PANCAKE OR JUST A CAKE

4 tbsps. buttere
l med. delicious apple, cored and cut into l/2″ slices
l/2 tsp. cinnamon
l tbs. sugar
2 eggs at room temp
l/2 cup milk
l/2 cup flour
l/2 tsp. salt
powdered sugar for dusting
Heat oven 400 and butter a l0″ round oven proof brasier pan . In another fry pan over med heqat meelt 2 tbsp. of the butter. Add apple slices , innamon and sugar and saute stirring occasionally until apples begin to soften and brown, about 5-6 mins. set aside in a bowl. Beat eggs with a whisk, add mil, and beat mixture until blended. Sift flour and salt into egg mix and beat just until blended. Malt remaining 2 tbsps. butter, add to flour-egg mix and beat until smooth. Pour atter into prepared pan and arrange apples evenly over batter. Bake until pancake is browned and puffed up. 25-30 min. Dust with sugar and serve immediately. Serves 2-4. William Sinoma
