DOUGLE CHEESE SCALLOOPED POTATOES

3 lbs. russet potatoes
l tsp. paprika
l med. onion, chopped
3/4 cup chopped red bell pepper
l/2 cup chopped fresh parsley
l cup packed grated Swiss cheese (about 4 ozs.)
l cup packed grated sharp white cheddar cheese (about 4 ozs.)
2 cups half and half
Butter l3x9″ baking dish. Add potatoes to large pot boiling water.
Boil until just tender, about 30 mins. Drain & cool. Peel and slice
potatoes. Preheat oven to 350. Place half of potato slices in
prepared dish. Season with l/2 tsp. paprika, s&p. Top with half of
onion, bell pepper & parsley, then half of each cheese. Cover with
remaining potatoes. Season with remaining papriks, s&p. Top with
remaining onion, bell pepper, aprsley, then cheeses. Pour half and
half over potatoes. Cover; bake 30 mins. Uncover. Press potatoes
down with spatula to even thickness. Bake uncovered until liquid is
absorbed and top begins to brown, about 45 mins. Cool Slightly.
