2 lbs. med shrimp (about 60)
l garlic clove finely chopped
l cup mayo
l/4 cup safflower oil
2 tbsps. chili sauce such as Heinz
2 tbsps. chopped fresh dill or to taste
l tsp. celery seds
l tsp. salt or to taste
2 celery ribs, chopped
l/2 med. onion chopped
Cook shrimp in boiling salted water stirring once or twice until pink and jsut cooked through, l to 2 mins.
Drain in a colander and cool completely. Bblend garlicl mayo, oil, chili sauce, dill, celery seeds and
salt in food processor until smooth. Add shrimp, celery, & onion adn pulse until shrimp is chopped.
Transfer to serving bowl and chill covered until cold, about l hr.
You can make up to 2 days ahead. Serve with crackers.
