6 large hard boiled eggs shelled
l/4 cup mayo
l tbsps. micned green onion
3/4 tdsp. curry powder
l tbsps. micned fresh parsley
Cut boiled eggs lengthwise in half. Scoop yolks into med. bowl. Mash yolks with fork. Add mayo, onion and curry powder and mix well. Season mix to taste with s&0. Divide f9illing among egg halves mounding slightly. Arrange on platter. Sprinkle with micned parsley. Can be prepared 8 hrs. ahead. Cover and cool. Garnish with olives if desired.
