3 tbsps. olive oil
4 garlic cloves; minced
l onion, sliced into crescents
6 mushrooms; sliced
2 carrots; sliced thin
2 ribs celery diag. sliced
l med. tomato; chopped
l/2 lb. shrimp, peeled, deveined
l/2 lb. scallops
l/2 cup white wine
l tbsps. oyster sauce
l tbsps. soy sauce
l can cream of mushroom soup (optional)
Heat olive oil in a wok or large frying pan over high heat. Add garlic, onion, mushrooms, carrots, celery, tomato, shrimp and scallops and stir fry for 2 mins. Add white wine, oyster sauce, and soy sauce. Cover and simmer for approx. 4 mins. Serve with rice or pasta. OPTIONAL: for a creamier sauce add cream of mushroom soup (undiluted) when adding wine.
