2 large English hothouse cucumbers, thinly sliced
2 tsp. salt
l cup distilled whtie vinegar
3/4 cup sugar
l/2 cup chopped fresh parsley
l med red onion thinly sliced
Place cucumbers on rimmed baking sheet; sprinkle with salt. Let sand at room temp. 2 hrs. Drain. Whisk vinegar and sugar in large bowl until sugar dissolves. Add cucumbers, parsley and onion. Season with pepper; toss to blend. Let satand at least 2 hrs. and up to 8 hrs. Transfer to serving dish.
The very large glass wide rimmed dish would be nice.
