CRUNCHY CARMEL APPLE PIE

l pastry crust for a deep dish pie 9″
l/2 cup sugar
3 tbsps. flour
l tsp. cinnamon
l/8 tsp. salt
6 cups thinly sliced peeled apples (golden delicious are good)
l recipe crumb topping (see below)
l/2 cup chopped pecans
l/4 cup caramel topping
Crumb Topping:
l cup packed brown sugar
l/2 cup flour
l/2 cup quick cooking rolled oats
l/2 cup butter
Directions for crumb topping: stir together brown sugar, flour, rolled oats. Cut in l/2 cup butter until topping is like course crumbs. Set aside.
In large mixing bowl stir together sugar, flour, cinnamon and salt. Add apple slices and gently toss until coated. GTransfer apple mix to pie shell. Sprinkle crumb topping over apple mixture. Place pie on cookie sheet so drippings don’;t drop into your oven. Cover edges of pie with aluminum foil collar. Bake in heated 375 oven for 25 mins. Then remove oil and put back in for another 25-30 mins without foil. Remove from oven. Sprinkle pie with chopped pecans then drizle with caramel on top. Cool on a wire rack and enjoy warm or at room temp.
