You’ll need a heay duty rimmed baking sheet for this,
4 russett potators peeled and cut into l/2″ thick fries
6 tbsps. veggie oill tbsps. cornstarch
l tsp. salt
Microwave:
Adjust o ven rack to lowest position and heat oven to 450, Place potatoes in bowl, wrap tightly with plastic and microwave until translucent around edges, 3 to 5 mins shaking bowk to redistribute potatoes halfway through cooking, transfer taters to cooling rack and thorouhly blot dry wsith paper towels.
Heat oil. coat rimmed baking sheet with 5 tbss, oil. transfer to oven and heat until just smokingm 5 to 7 mins. meanwhile whisk remaining oil, cornstarch and salt in large bowl. add taters to bowl and toss to coat.
Bake potatoes. Arrange in single layer on hot baking sheet and bake until deep golden bbrown and crisp 25 to 35 mins. flipping piotatoes half way through cooking time. transfer to paper towel lined plate and blot wih additional paper towels. serve.
