l head (l lb.) cabbage
2 tbsp. butter
l/4 cup finely chopped onion
2 med. tomatoes, chopped or l cup canned tomatoes, chopped
l-l/2 tbsps. flour
l cup chicken broth
l/4 tsp. each s&p
l/4 cup micned parsley
l/2 cup sour cream
Cut the cabbage into lengthwise quarters. Remove most of the core.
Keep the bundle of leaves together with a little of core. Place in a
bowl. Cover with boiling water. Drain after l0 mins.Place cabbage in
a small rectangular baking dish. Melt butter in skillet. Saute
onions until soft. Stir in the tomatoes. Sprinkle with flour. Cook
for a minute, stirring. Add broth. Bring to a simmer. Season with
s&p and parsley. Spoon sauce over cabbage. Cover with foil. Bake at
375 for 20-25 mins. Bastgge a few times with sauce. Remove from oven
Thin sour cream with a little of the sauce. Pour over cabbage. Bake
another 5 mins. Good served with meat laof, home fried potatoes.
