l/4 cup butter
l/3 cup chopped onion
l medium chopped green pepper
3 cups chopped broccoli
l cup half and half
l tsp. curry powder
Saute onion and pepper in butter. Add broccoli with l/4 cup of
white wine and 3 cups chicken broth; simmer until tender. Blend in
processor until smooth. Add cream and curry.
Serves 6. You can also add a red or green pepper when sauting onions (or leeks) – also add 3 cloves chopped garlic at same time. UYou can add l lb. potatoes with the broccoli.
