CREAM CHEESE/LEMON MUFFINS

l egg
l/2 cup plus one tsp. oil
l/2 cup milk
2/3 cup sugaqr
4 ozs. cream cheese, toom temp.
l-l/2 cups flour
l-l/2 tsp. baking powder
l/2 tsp. salt
l lemon
Mix egg, oil, milk and sugar together. Cut cream cheese into small pieces, mix with 2 tbsps. flour. Grate l lemon rind into batter. Add rest of ingredients. Eliminate salt and baking powder if you use self rising flour. Mix ingredients and spoon into l2 greased muffin tins. Bakie at 375 for 20-25 mins. Topping 2 tbsps. lemon juice (fresh), l tbsps. sugar. Mix to form sugar. Pour over warm muffins. Prodigy
