2 tbsps. butter
2 tbsps. flour
l-l/3 cups miok
l/2 tsp. salt
l/8 tsp. white pepper
2 pikgs (6 oz. each) frozen crabmeat, thawed and drained
l/4 cup shredded mozzarella
l/4 cup parmesan cheese
l/4 cup soft breadcrumbs
l/4 tsp. paprika
hot cooked rice
Melt butter in heavy sacuepan over low heat; add flour, stirring until smooth. Cook l min. stirring constantly
Gradually add milk; cook voer med. heat stirring constantly until thickened and bubbly. Stir in s&p; stir in
crabmeat. Spoon seafood mix into lightly greased -l/2 qt. casserole. Bake at 35-0 for l5 mins. Combine cheeses
breadcrumbs and paprika, stirring well. Sprinkle over crabmeat mixture and bake an additional 3 mins. or until
cheeses melt. Serve over rice. Serves 4 Prodigy
