l cup flour
l/2 cup yellow cornmeal
l/2 cup sugar
l tbsps. baking powder
l/2 tsp. salt
l cup drained whole kernel corn
2 eggs
l/2 cup milk
l/2 cup melted butter
In large bowl mix flour, cornmeal, sugar, baking powder & salt. Add
corn; toss to coat. In small bowl beat eggs with fork; beat in milk
and butter. Add to corn mixture; stir just until blended. Fill
greased muffin pans 2/3’s full. Bake at 400 for 20-25 mins. or
9″ square pan for 30-35 mins.
