l large shallot sliced
l large clove garlic sliced
juice and zest of l lemon
l/4 cup pomegranate or orange juice
l/4 cup balsamic glaze (l/2 cup balsamic vinegar reduced by half)
l/4 cup olive oil
2 sprigs of thyme
2 bay leaves
10 black peppercorns, crushed
6 med. boneless chicken breast halves or 8 boneless thighs

Whisk all ingredients except chicken together, then add chicken. Cover and marinade in frigerate for at least half hr. or overnight. Place chicken on grill and cook breastds 7 mins. per side , thighs 9 mins. per side. Before turning chicken brush a little of the leftover marinade onto the uncooked side.
