l/2 cup bottled chili sauce
l/2 cup catsup
2 tbsps. dark brown sugar
2 tbsps. cider vinegar
2 garlic cloves, finely chopped
4 large boneless skinless chicken breast halves (about 5 oz. each)
Bring first 5 ingredients to simmer in heavy small saucepan over
low heat. Simmer until reduced to 2/3 cup, stirring frequently,
about 8 mins. Remove from heat. Season to taste with pepper.
Preheat oven to 400. Line baking sheet with heavy duty aluminum
foil, folding up sides slightly to form rim. Brush both sides of
chicken with barbecue sauce. Place chicken on prepared baking sheet.
Bake chicken until cooked through, about l8 mins. Cool 30 minutes.
Cover and refrigeratge until well chilled. (Can be prepared l day
ahead. Keep refrigerated.) Cut chicken crosswise into l/2″ thick
slices and serve.
