4 boneless skinless chicken breast halves (about 6 oz. each)
l/2 tsp. salt
l/2 tsp. pepper
l/4 cup flour
4 tbsps. olive oil divided
l lb. small fresh mushrooms sliced
l/2 cup onion
l cup marsala or other ed wine
l cup chicken broth
Season chicken breasts with s&p. Lightly coat both sides of chicken with flour. In large skillet heat 2 tbsps. of olive oil over med high heat. Add chicken;cook until golden about 2 mins. on each side. Transfer to plate. Reduce heat to med. Add remaining 2 tbsps. oil to skillet; addmushrooms and onion; cook and stir until tender aobut 7 mins. Stir in marsala and chicken broth. Return chicken to pan; simmer covered until no pink remainsin center, l0 to l2 mins. Serves 4 1
