3 tbsps. olive oil
4 skinless boneless chicken reast halves
3 tbsps. fresh lemon juice
4 galic cloves, chopped
l tsp. packed grated lemon peel
l cup canned chicken broth
l tbsps. dried basil
Heat olive oil in heavy large skillet over med-high heat. Sprinkle whicken with s&p. Add chicken to skillet and saute until brown and cooked through, about 5 mins. perside. Transfer chicken to platter; tent with foil/ Add lemon juice, garlic and lemon peel to same skillet. Stir over med-high heat until fragrant, aobut 30 seconds. Add chicken broth; boil until reduced to sauce consistency. about 8 mins. Mix basil into sauce. Season to tast with s&p. Spoon sauce over chicken and serve.
