Pound chicken breasts a little; 4-6 breasts. Cook a frozen package
of chopped spinach and drain moisture. Saute 2-3-4 coves garlic in
a little olive oil. Crumble some feta cheese (strength you like)
Layer a little spinach, garlic in oil and feta cheese on top of each
chicken breast. Roll up and secure with toothpicks. Dredge in a few
beaten eggs. Roll in breadcrumbs.
Brown breasts in skillet in a little olive oil and butter. Cook in
oven at 350 for 20-25 mins.
Sauce: Melt 2 tbsps. butter in skillet. Add l cup mushrroms, sliced.
Add l tbsps. flour, cook a little. Add l cup dry white wine. Add
l cup chicken broth. Simmer and reduce a little. Add l tbsps. lemon
juice.
Pour sauce over chicken.
