3 tbsps. butter
l/2 cup finely minced onions
2 whole chicken breasts
l/2 tsp. salt
l/4 tsp. pepper
2 tbsps. red paprika
l cup chicken stock
l/2 cup sour cream
Have crepes ready. Melt butter in saucepan & saute onions until
goldenb. Remove fro pan & brown chicken breasts till golden brown.
on all sides. Sprinkle with s & p and paprika. Add stock and bring
to a boil. Cover, reduce heat & cook slowly 35 to 40 mins. until
tender. Remove chicken to side dish to cool. Take out the bones.
Dice meat into small cubes. Rapidly boil down remaining gravy in
saucepan, reducing it to l/2 cup or so. Off heat, mix gravy with
sour cream and diced chicken. Put a portion of this mixture on
center of each crepe. Roll up crepes and place in buttered oven to
table baking dish. Preheat oven to 375. Bake l0 to l5 minutes.
(Set aside some of the sauce before mixing with chicken and add
more sour cream to it to thin it out – Pour over casserole before
baking)
