CHICKEN LIVER CANAPES

l4 oz. chicken livers, trimmed and rinsed
l/4 cup olive oil
l tbsps. unsalted butter
l tbsps. fresh lemon juice plus additional to taste
4 fresh sage leaves or l tsp. crumbled dried
2 tsps. drained bottled capers
l/4 cup chopped onion
2 ozs. proscuitto, chopped
toast points
In a heavy saucepan combine the chicken livers, oil, butter, l
tbsps. lemon juice, sage, capers and onion and cook the mixture over
mod-low heat, stirring occasionally, for 35-40 mins. or until the
mixture is browned. In a food processor puree the mixture with the
proscuitto and season with salt & pepper and the additional lemon
juice if desired. Spread the mixture on the toast points.
Makes about l-l/2 cups.
