CHICKEN BREASTS/TOMATOES/MOZZAREL

4 boneless skinless chicken breast halves (about l-l/2 lbs.)
3 tbsps. olive oil, divided
l cup chopped onions
2 tsp. bottled minced garlic
l can (l4 oz.) italianb style stewed tomatoes
l-l/2 cups (6 oz.) shredded mozzarella cheese
preheat broiler
pound chicken breasts between 2 pieces plastic wrap to l/4″ thickness.
heat 2 tbsps. oil in overproof skillet over med heat. add chicken, cook about 3-l/2 mins per side or until no longer pink in center. transfer to plate, cover and keep warm.
heat remaining l tbsps. oil in same skillet over med heat. add onions and garlic, cook and stir 3 mins. add tomatoes, bring to a simmer. return chicken to skillet, spooning onion and tomato mix over chicken. sprinkle cheese over top. broil 4 to 5″ from heat until cheese is melted.
