Combine for dressing:
l/4 cup olive oil
l/4 cup lemon juice
2 tbsps. honey
2 tsp. garlic minced
l tsp. dried thyme
l/2 tsp. salt
l/2 tsp. crushed red pepper flakes chicken:
2 tbsps. olive oil
2 boneless skinless chicne breast halves
l can whole artichoke hearts, drained, halved or quartered
l lemon
Combine the dressing ingredients.
Season chicken with s&p. Saute in 2 tbsps. oil in a large saute pan coated with cooking spray. Cook over med high heat until lightly browned on both sides, 3/5 mins perside. Reduce heat to med, cover and cook 5 mins. (no longer). Add artichokes and dressing. Simmer and reduce about 3 mins. Top chicken with slices of lemon; cook 2 mins or until dressing thickens.
Serve over cooked orzo and garnish with parsley.
This is truly delicious but don’t over cook the chicken or else it will dry out. If you want to increase the amount of chicken also increase the dressing amount.
